Evenings are hectic and the time we have is precious in my home. During the week, my son and I usually arrive home an hour before my husband does. That gives us some time to water the plants and feed the animals before I need to start dinner. The little time I have in the evening can leave me hard pressed to have some kind of an idea of what will be for dinner beforehand. My husband helps with the cooking in our home however, I am responsible for the majority of the evening meals during the week. One of the best meals my family enjoys is this recipe for chicken tortilla soup. This meal is so easy and satisfying, especially on a cold evening. If you wanted to substitute the chicken for ground beef, it is just as delicious.
Quick and Easy Chicken Tortilla Soup
Ingredients:
1 packet taco seasoning
1 packet ranch seasoning
1 can kidney beans
1 can pinto beans
1 can diced tomatoes
1 can green chiles
1 can corn or hominey
2 cups chicken
2 chicken boullion cubes
4 cups water
Combine all in a pot an bring to a boil. Once boiling, cover and resuse heat to low. Allow to simmer for 30 mins. Serve garished with tortilla chips, cheddar cheese, and sour cream. Enjoy!!
