This meal is so yummy and easy. If you garnish it with cheese and have some bread, it is a full meal. The winter weather is a great time to try out new and interesting recipes. This is something I was able to put together one evening and it was hit with my family.
Soup is great because it can simmer for hours and fill the house with delcicious aromas. This soup brings together potatos and sausage in a delicious creamy soup that is sure to make its way into your rotation.
Ingredients:
5-7 peeled and diced potatos
1 package breakfast sausage (1 package link sausage can be used)
1/2 onion diced
2 minced garlic cloves
4 medium carrots peeled and sliced
1 packet onion soup mix
2 chicken bouillon cubes
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
6 cups water
1 cup heavy whipping cream
Begin boiling potatoes in a large pot or dutch oven with 6 cups water. Add bouillon and onion soup mix. While the potatoes cook, start cooking breakfast sausage with diced onion and minced garlic in a skillet. Allow potatoes to cook 20-30 mins, until soft. Add the sausage mixture, and the sliced carrots. Add heavy whipping cream, stir to combine and bring to boil. Turn heat to low and allow to simmer for 30 mins. Garnish with cheese and serve with garlic bread. Enjoy!!
